My daughter Brooke and I were getting ready to make a recipe from one of her cookbooks. The recipe called for colored sugar crystals of which I had none. I remembered seeing a Pin that was about DIY colored sugar on Pinterest. I found the Pin and followed the directions from the site Mom On Timeout. Glad I stumbled across this clever idea and it's a great way to say money, helped me save $5 on our recipe. Plus it was quick and easy. Visit her blog she has lots of great tips and recipes.
It's such a cute book with simple recipes that little kids could help with. Now, most of the book is made with pre-made dough and other items, but if you wanted you could make it your own. I loved this project with Brooke she read the recipe to me word for word. If you have a little girl who loves any Disney Princess, this is a fun project that would give you that much needed Mother/Daughter time.

What Ya'll Need:
1 16 oz. pkg. Pillsbury refrigerated sugar cookie dough
1/4-1/2 cups of All purpose flour
48 pretzel sticks (2 1/2 inches long)
Star shaped cookie cutter
*Colored decorating icing, Colored sugar or Edible Glitter and Gold/Silver Dragess

Directions:
Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in 1/4 cup of the flour until well blended. Sprinkle flour onto work surface; coat all sides of dough with flour. With rolling pin, roll out dough 1/8 inch thick, adding additional flour as needed to prevent sticking. Use a 2-inch star-shaped cookie cutter, cut out stars. Place pretzels 2 inches apart on ungreased cookie sheets. Then gently place a star on top of pretzel. Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes. Spread icing on to cookies, sprinkle with sugar and place dragess in points of stars. Let stand until set and have a magical treat!

**Cooking Tip: We homemade the color sugar. I found a pin on Pinterest. The site was Mom on Timout I followed the directions and worked perfect (I used granulated sugar) Also when placing the stars on the pretzel line the cut at bottom on pretzel then place cookie you want it to be even on pretzel so star is straight.
Anytime I start baking she pulls up a chair and says, "What can I do?" So no matter how small the task I find something she can do. I remember what it was like getting to help my mom and grandmother, so I want to same for Brooke. We decided to make cookies together and she wanted chocolate chip. So, I decided to try one of the recipes I found on Pinterest. I'm so glad I did because I found my go to recipe for most any cookie base you'd need for a chocolate based cookie. If you'd like to see the original recipe for the chocolate chip cookies go to Apple-A-Day.

Directions:

Preheat oven to 350. In a stand mixer fitted with a paddle attachment, cream together butter and sugars then add the egg and vanilla and blend in. *Mix in flour, cornstarch, baking soda and salt. Then add in the Snickers candy pieces. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. I cooked mine for 9 minutes. Let them cool on the sheet for about a minute then remove to a cooling rack and cool for five more minutes.

**Cooking Tip: I cut the bite size pieces in to fours, then keep in a bowl and placed them in to freezer until I was ready to use them so that they do not melt. It also made it easy to mix in the cookie dough. I did this step first so that I wouldn't be rushing in middle of making cookies.
Pizza Dip is a recipe I original seen on Pinterest, I'm not sure who's the original person who came up with this idea but I'm happy they did. I took a look at a few recipes and seen what some people were adding or not. So I just realized it was all based on you the taster. I knew this recipe would just end up with things my husband and I like. The result was Yummy and something I would do again.

Chicken is always a good choice to my family and me. It's something you can put in almost any dish. So of course chicken spaghetti is something that we like to eat. I originally posted this recipe almost over two years ago but I needed to update since there are many versions of chicken spaghetti that can be found. I have to say I like a lot of them. It's easy to change the noodle or cheese you use as well as the cream you put in it. I just really enjoy the flavors that my recipe has so my family requests it every time. I don't mind trying new things but when something is good, why change it!

What Y'all Need..
3-4 large Boneless Chicken Breasts or Rotisserie Chicken
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 can Cheddar Cheese Soup or Fiesta Nacho Cheese Soup(for s kick)
1 can (10 ounce) Rotel Diced Tomatoes with Green Chilies
3/4 cup of Milk (we use 2%)
1/2 tsp. Salt
1/2 tsp. Pepper
1 tbsp. Butter (we use I can't believe it's not Butter)
2 cups Shredded cheese, (we use Mexican Blend)
8-12 ounces Spaghetti Noodles(or your favorite), cooked and drained

Directions:
If using rotisserie pull all chicken meat apart and place to side. If using breast cut up chicken into bite size pieces. In a large skillet add chicken, butter, salt and pepper. Cook over medium-high heat until chicken is no longer pink. Stir in soups, milk and rotel until combined and it's a slight bubble then add cheese stirring constantly until the cheese melts. Once sauce is ready add to noodles mix well. Let sit 2-5 mins then serve. Top with extra cheese, We do!

Cooking Tip** While the chicken and sauce is cooking. I boil the noodles as well. So I can mix and serve right away. Also if you want to say time you could always use pre-cooked breast meat.
As
I have noted before my husband is a lover of all salsa's that are
"Green." Brian asked for me to make some salsa since he was in a mood
for it. He wanted me to try and make it like one of his favorite which is from a
restaurant called Rosa's Mexican Cafe. I was able to come across a recipe
online tried it and the recipe was spot on and was very good. It's simple
enough to make and if you love green sauce and want to try something new. It's
kind of sweet and has heat at the same time. Hope you enjoy as much as we did.

My
mom's cooking is so first-rate. One of my favorites is her chicken & dumplings, I could eat them anytime. It was a slightly cold day in Texas a few days ago and I wanted my
mom's chicken & dumplings. Nice way to always warm up so I decided to make
them myself. I followed her recipe and they came out delicious. I just wish she
was with me so that she could have shared in the goodness.

{Mama Rita's Quick} Chicken & Dumplings

What You Need:

3 Chicken Breast (you can use dark meats as well)
6 Cups Chicken Broth
4 ct. Pillsbury Buttermilk Biscuits Value Pack 7.5 oz
1 tbsp. Garlic Powder
1 cup flour
Salt and Pepper for taste

Directions:
In a large pot add chicken broth put on a medium heat, cut chicken breast in half so that they are in 6 slices add to the broth and cook for about 20-25 mins. Once chicken is done remove from broth and pull apart or cut up in to bit size pieces. While the chicken cooks, open the cans of biscuits, tear each biscuit in to three sections and roll them flour and set aside. Make sure you have a good amount of flour on the biscuits so they don't stick to each other. The flour helps the sauce thicken so don't worry about having to much flour. Add, the biscuits two at a time to broth and pushing down with a spoon in the broth do this till all the biscuits are in broth then add the chicken salt, pepper and garlic powder; cook 10-15 mins. Stir during cook time so that the chicken and dumplings don't stick to the bottom. This makes about 8-10, 1 cup servings.

*Now if you want to make the dumplings instead of using canned biscuits here is my recipe for them.

What you Need:
2 cups all-purpose flour
1/2 teaspoon baking powder
Pinch of salt
2 tablespoons of butter(salted)
1 cup of milk

Directions:
Combine flour, baking soda and salt in a large bowl. Cut the butter in using fork or fingers(I use fingers) Add milk little at time(1/4 cup), stirring between batches until it forms a ball of dough. Place dough on floured work area, using a floured rolling pin, roll the dough out thin(add more flour as needed don't want area to be sticky). Once it's thinned out Using a pizza cutter or knife, cut either strips or squares out(I do squares). When your cutting make sure each dumpling has flour on it so they don't stick together( the flour also helps thicken the sauce). Once u place in pan cook at least 10-15 mins..

**Cooking Note: If you want more dumplings just add two more cans of biscuits. If you add more I would suggest adding 1/2 cup water to the mix to keep enough juice.

Thanksgiving is one of my favorite holidays. I love cooking meals for my family so this time of gather is the best. I seen the recipe for Pumpkin Spice Cookies in Taste of Home cooking magazine. This was a great recipe that I will be making again and again. I made them for a party at my husbands work and sent all the cookies with him thinking maybe there would have been some left over. But the dish came home empty, my husband said that everyone liked them. If you like pumpkin spice you will enjoy this recipe. I can't wait for my family to try them.
This dish is guaranteed to clean your plate. Words from a
friend who tried the first time I made the dish. I originally did not know how the ricotta cheese would
taste, since the recipe had originally called for cottage cheese. I had written the recipe down from a
website but forgot to add the name and I can't remember what it was. One day I will find it but until then my combination came out great and taste good. Simple recipe and easy to make. If
you like lasagna you will like this one just a bit of a different taste to it
and a bit faster to make.

great friend of mine at work had her birthday last week. I asked her what she
would like me to bake for her. She couldn't decide whether she wanted brownies
or cookies she told me to pick one. So I was trying to think of something to do
and then I remembered seeing a pin on Pinterest with both cookies and brownies.
It had no name on the post so I didn't know what to call them and from the
picture you get the idea of how to make it. So all I had to do was figure out a
name for it. I gave it the name "Reese Brookie Cupcake." I changed
one thing about it from the original picture; I cooked mine in a cupcake pan
and used a full size Reese's peanut
butter cup. Plus it totally works because my daughter’s nickname is
"Brookie." I wanted to have peanut butter in every bite not just the
center. If you love brownies, cookies and peanut butter cups. This is a must
try treat!
The little smokies give a nice flavor to the jalapenos. My husband loves this one and I have to say so do I! My mother-in-law gave me this idea she had made them once but stuffed a whole smoky inside a whole stuffed jalapeno. This is a great appetizer for any party or just for two, like my husband and I.
My husband Brian has been asking me to post one of his favorite recipes’s for some
time now. I made him this recipe 6 years ago when we first started dating. He likes to tell me
that when I made this recipe he knew he would love me forever. Brian is full of
jokes might I tell you! The recipe is Cowboy Pasta. I didn't get this recipe
from any sites I was reading an old cookbook from like 1970 and seen a recipe
called "Working Man’s Pasta".. It was pinto beans, boxed Mac &
cheese with hot dogs. A combination of ingredients I was not sure about. However, I had the idea to
cook it with hamburger meat. So I looked in the pantry and all I had was
Velveeta shells & cheese and ranch style beans. I thought, "This is what
I'm trying for dinner!" It has had many different things added over the years but those three items are
the base to Dani's Cowboy Pasta. I have given this recipe out for years and
many people I know always tell me how great it tastes. This recipe will always
be on my family's favorite list.

I don't like a cold egg, potato or noodle nope, I'll pass. I only recently was alright with trying a potato salad at a family gathering because my husband said it tasted like a deviled egg, which I love. So I gave it a try and loved it. I went looking all over for a recipe and couldn't find one that was just simple and easy. I figured why not just take the two and mix and see how it tasted. It was a match made in heaven. I now can say I have a deviled egg potato salad recipe of my own.
I
was at a family get-together recently where I tried my first Deviled Egg
Potato Salad it was so good. I asked who made it and my aunt Jan said it was
purchased at Sam's. I was shocked because it was so excellent. I wouldn't have
ever thought I'd like a store bought salad. I looked at the ingredients and
thought it seemed easy. I knew I had to try and make this
recipe. My husband liked it as well and said he'd want to try it on a BLT so
from that statement an idea was born. Make a deviled egg potato salad and then
make a BLT and combined. So here is my finished product and might I say it
was very good.

My daughter Brooke asked me if she could make a cake. I wanted to do something fun and so I remembered how great a cake was that I use to eat a lot when I was doing weight watchers. It was fun because you get to play a little with the cake mix as you make it. So Brooke and I made a Diet Dr.Pepper Cake. I know people always talk about how a coke is more important but trust me when I say the flavor is still there. I also came across a sugar free mix they have now and so it made this cake even better. I hope y'all enjoy my pictures. Brooke had fun and was happy so for me that's just life's greatest gift!

1 package of 5 or 8 count Cinnamon Roll Waffles

Syrup

I have been cooking a lot of recipes at home in my crock pot and was looking for a way to make chicken enchiladas with a salsa Verde. I love Salsa Verde "green sauce" it can be used as a dip or in a favorite recipe and I have had my fair share of chicken enchiladas, using salsa Verde rather it was at a restaurant or at home. So I was on a mission to find the best Salsa Verde in a jar I could find. I didn't want to invest all the time to make the salsa this was something I wanted to be quick. Let me tell you my test taster(husband) was not at all upset about this idea. So we were shopping at Wal-Mart and my husband seen a new brand of salsa Verde from non other then Wal-Mart. He wanted us to try this so we bought a jar and tested it out on just a chip to see is this it.. YES IT WAS! I couldn't believe that a jar of salsa costing $1.98 would win over some that cost up to over $5 bucks. So I was ready to test it out and the end result was Perfect. I was so happy with the flavor of this salsa that we bought 6 jars to keep on hand(my husband eats this like candy!) I have tried this salsa in a few recipes now and I have to say it's yet to disappoint. So for all you Salsa Verde fans give this one a try and let me know what you think.

I have been trying out different recipe's using marinades that are homemade and ones that come already made in bottles from the store. The brand I started with first was Lawry's. This time I tried the Mesquite flavored marinade for a recipe. I made shrimp tacos and this shrimp was very good. It didn't take long at all to cook. So over all I thought this was another successful recipe. I did decided that to finish the bottle I think I'm going to try it on chicken and grill them. I can't wait to see how that will taste.

What Ya'll Need:
1/2 bag of salad shrimp(no-tale)
I/4 cup of the seasoning

What to Do:
Thaw the shrimp out and place it in a container that has a lid. Add the seasoning to your liking I used 1/4 cup for 1/2 bag of salad shrimp and it was plenty. Let sit in fridge for 20-30. Cook shrimp on a sauce pan for 5-8 minutes.

*Cooking Note: If you cook more shrimp just read how long to cook them for on the bag of shrimp you use but best guess is once its white it's done.
will be spending time with your family & friends. This means there will be
food. Now with my family the one item you can bet there will be a ton of
is Deviled Eggs. We love them!! I made 4 dozen deviled eggs
at Thanksgiving dinner when I hosted it at my house. Every last one
of the eggs was gone quick. I have boiled eggs more than one way
and thought the way I was doing it had to be the easiest. I had seen a show on
a cooking channel that showed an even better way then what I had
been doing. So I wanted to share with you my new tricks to boiling
eggs. I also will tell you a trick for peeling the eggs that is a game changer.
Now some people already know these tricks and tips but for those new to cooking
I wanted to share.

Here's what Ya'll Do:

1. Choosing the Right Eggs

For perfect cooking, start with eggs that
don't have any visible cracks. You don't
want cracks in the shell because the minute the water starts to boil they
split open and the pan fills with egg yolks. A tip for eggs also is if you have
time let the eggs sit at room temperature for at least 5-10 minutes.

2. Boiling & Cooking

Depending on how many eggs you are cooking
depends on the pan size. Just make sure you can place the eggs in a single
layer, this helps the eggs from cracking. Fill the pan with enough
water that it will cover the eggs. *Add
1/2 tsp. of baking soda to the water. Then bring the water
to a rapid boil. Let boil for about 1-2 minutes then cover and remove
from the heat.

3. Timing is Everything

Leave the lid on the pan DO NOT REMOVE you will need to let the eggs sit
for 13 minutes. The steam from the water continues to cook the eggs
even though they aren't boiling any longer.

4. Stop the Cooking Process

Once the eggs are done cooking remove
them immediately. Place the eggs in a "Ice Bath." Fill a
bowl or the sink with cold water and add ice. Let the eggs sit in the cold
water for about at least 10 minutes. You want to do this because some
cooking will continue, particularly the yolk of the egg. An overcooked egg
causes a green layer to form around the yolk. This is due to residual heat
called “carry over cooking.” While they're in the cold water, it stops the
eggs from cooking and a layer of steam develops between the shell and the egg
white. The steam helps make peeling an egg much easier.

5. Peel and Enjoy

After the eggs have cooled peel and Enjoy. I tap the tip on counter and then roll and the shell slides right off.
If you would like a good recipe for Deviled Eggs visit this Website: http://www.deviledegg.org/ or try mine Classic Southern Deviled Eggs!

Sometimes they are good with salt, pepper and paprika only!

***Cooking Tip: Use a Kitchen Timer, this helps keep track of the 13 minutes. You don't want to under do it or over do it. Keep track of time. Now the baking soda I said to add is to help peel the egg easier. Trust me my grandmother has been cooking her eggs the same way for as long as I have been alive. When I told her about this she changed her ways. So Give it a try it really works.

Here is a recipe that I cooked in the Crockpot. I have been
using different flavors with chicken and testing them in different recipes here
is one that I like a lot. I used Lawry's Baja Chipotle Marinade. It was so
good I will be making this one over and over. I made enough chicken
to last me for three dinners. I will be trying more of the marinades
soon. Hope you try this one and enjoy.

This is the marinade I used. I also used this on pork chops they were yummy.

I'm
so thankful for my Grandmother Norma! She is one of the most caring,
wonderful person I know. I can't express in words the love I have
for my grandmother. We are so much alike and have a lot of the same
interest. Spending time with her is like being with your best friend. She
has and always will hold this very special place in my heart. I love that my
daughter gets to spend time with her also. I was recently visiting with
her and she shared a cookie recipe with me that I had never heard of
called Special K Cookies. This recipe is for a cookie that is "No-Bake"
with peanut butter and special k cereal. It could have been
called No-Bake Peanut Butter Heaven; however that would be confusing for people
I'm sure. It's a great dessert to have for people who like peanut butter. It's
light crispy and peanut buttery goodness! I hope that y'all try this one
and let me know that you think. Go ahead and give it a try.
